I usually eat pretty healthy when it comes to breakfast, lunch and dinner, but my downfall is snacks. For me, meals are much more thought out, so I’m often able to figure out a healthy option. But because snacks are so easy to grab in a hurry, I’ve definitely been known to have a muffin, cookie, etc. during the afternoon to get me through to dinner.
Whenever I have time, I love to make energy bites that I can snack on throughout the week. I’ve made many different variations, but I am a huge peanut butter and chocolate lover, so these are my go-to. I also add chia seeds for some extra healthy fat, fiber and protein.
These energy bites are super easy to make and don’t require any baking! I usually let my dough cool before forming these so they hold easier, otherwise they tend to crumble. You can play around with mixing in flaxseed, shredded coconut, etc. if you want to change things up at all.

NO BAKE PEANUT BUTTER CHOCOLATE CHIP ENERGY BITES
Makes 9 bites
1/3 cup peanut butter (I used smooth)
1/4 cup honey
1 cup old-fashioned oats
1/4 cup mini chocolate chips
1 tablespoon chia seeds
- Combine peanut butter and honey in a large bowl until smooth
- Stir in chia seeds, oats and chocolate chips
- Let “dough” sit in fridge for 30 minutes or until chilled
- Form into 1″ or 1.5″ balls
- Keep refrigerated in an airtight container until ready to eat
